Well after a month long hiatus, I’m BAAAAACK. 😉
With my design business keeping me busy and my free time being spent working on the overall appearance as well as future post planning of my blog, I decided to take some time off. I’m so happy you’ve all been patient and hung in there with me! Thank you!!
I have so many fun posts planned for the upcoming months including client installs with lots of photos and even source guides to go along with them. If you’re a regular here, you’ll notice I’ve added a “Shop My Home” tab which has proved to be very popular!! I try and add to this anytime I add something new to my home that I love and think you’ll love too. In the upcoming weeks, be on the lookout for my client before and afters as well as a “Shop the Makeover” tab where you’ll find all the goodies I used in those client installs. Fun right?
I’ll also be adding lots of recipes, starting with this Coconut Curry Soup. Some of you may be thinking, “C’mon Selena, this blog of yours is supposed to be about design, not food. Well, allow me to explain. Being a creative person and loving all things home, I find creating in the kitchen to be another aspect of design. I not only design beautiful tasteful spaces, but also design beautiful, tasteful food. And there you go. 😉
If food isn’t your thing, that’s ok. Don’t you worry. There will still be lots of simple diy’s, design advice and tips as well and even some ‘girl talk.’ I plan to share with you allllll the things. Together, we will be designing simple, smart and savvy lifestyles. 🙂
Whew. Now that we got that out of the way, let’s talk soup!!
Over on Instagram I shared an instastory about this awesome, super easy and downright satisfying soup and boy was it popular! So many have been waiting for this one so here you go! This is seriously so easy to throw together! What makes it even more so, is the Rotisserie Chicken used. A quick stop at the store for it and the fresh ingredients for toppings makes it so convenient!
The Easiest Coconut Curry Soup
1 32oz carton Chicken Stock
2 14oz cans Coconut Milk
2 tsp Red Curry Powder
2 tsp Yellow Curry Powder
1 tsp Garlic Powder
1 tsp Minced Garlic
2 T Brown Sugar (can substitute with 3 T Coconut Sugar)
1/2 tsp Siracha (or to taste)
1/8 tsp Crushed Red Pepper (or to taste)
1 White or Yellow Onion, sliced
Add all ingredients to Dutch Oven or large stockpot over Medium Heat. Bring to almost boiling, lower heat, cover and Simmer, stirring frequently for at least one hour or up to 3. The longer this simmers, the more the flavors will marry.
Serve with Sliced Chicken Breast ( Rotisserie is best ), Bean Sprouts, Cilantro, Spinach, Mushrooms, Rice Noodles, Cabbage and sliced Scallions. YUM!
